Scientists now believe that green vegetables provide us maximum benefit when consumed in boiled form. The team of scientists led by professor AK Rai experimented with several methods of vegetable preparation, including microwaving, boiling, frying, and different drying methods for processing and came to a conclusion that these leafy vegetables retain magnesium, an important mineral for humans, the most when boiled.

NMA Note: Because modern industrial agriculture has depleted the soil of such minerals as magnesium, taking a daily supplement is advisable. Herbicides such as glyphosate, for example, block the utilization of minerals from the soil. Always check with your doctor or healthcare provider.
